Labane − Yogurt Cheese

Sour tasting and creamy, labane is the easiest cheese to make at home. Sheep milk yogurt makes an especially good labane. Cow milk yogurt is also good.
 

Ingredients (serves 4)
  • 5-6 cups yogurt, preferably sheep milk (at least 3% fat)
  • 2 teaspoons salt
  • Olive oil 
Mix the ingredients and serve at once, or let stand for 5-10 minutes for a stronger lemony taste.
