Sumac
(Sumach, Summaq)

A violet-red sour spice made from the berries of the wild bush Rhus coriaria and used in Middle Eastern cooking. Sumac picks up any fresh vegetable salad (notably Arab-style salads), and is used to season meat, fish, rice and vegetable dishes.
